Recipe for Roasted Garlic Bread Spread

each Whole bulb roasted garlic
4 Cloves of raw garlic
8 tbsp Virgin olive oil
4 tbsp Butter
1 tsp Salt
2
tsp Paprika
1 tsp White pepper
2
tsp Dried thyme (optional)
8 tbsp Romano Cheese, grated
Wide Mouth Canning Jar
Remove the roasted cloves of garlic
and place in a blender with the remaining ingredients. Make sure the
everything is at room temperature. Process until smooth and creamy.
If giving as a gift add the following instructions to jar:

Spread on Italian or French bread. Top with grated cheese and broil until golden brown.
Spread is enough for 2 whole loves of French
Bread.
Chunky Tomato Pasta Sauce
1 1/2 cup Diced onions
1/4 cup Water or olive oil
3/4 cup Chopped celery
1/2 cup Chopped green bell pepper
2 cup Sliced fresh mushrooms
2 Garlic cloves -- minced
4 cup Chopped fresh tomatoes
3 cup Tomato sauce
2 cup Tomato puree
1 tsp Dried oregano
1 1/2 tsp Dried basil
1 Bay leaf
Salt and pepper -- to taste

Heat the water or olive oil in a large saucepan over medium heat. Cook the onions for 5 to 6 minutes, then
add the celery, green pepper, mushrooms, and garlic and cook for an additional 5 minutes.
Add the tomatoes, tomato sauce, and tomato puree and stir until the sauce is well blended. Add the herbs,
salt, and pepper and simmer, uncovered, for 30 minutes.
Remove Bay leaf. Distribute the pasta sauce between 2 wide mouth canning jars.
After filling the jars, wipe the rims carefully with a damp cloth to remove any
food and then top with the warm lid and attach the ring. To seal - Place covered jars in large pot. Cover and boil for about 5 minutes. Promptly turn off heat and remove pot from
element. Carefully remove the jars unto cloth covered table top. Once cooled it is ready for gift giving.
As the jars seal you should hear a "ping" sound, this will let you know that it has sealed properly. If you
miss the "ping", wait until they are completely cool and press on the top of the lid. If it doesn't move at all, it's sealed. If sealed properly the jars when opened should have a popping sound. Keep finished
pasta sauce in cool and dry area for storing.
